Good question. I assume the reason is to take advantage of merchandising for Christmas season.
Merchandising! Where the real money on the movie is made!

I think they would have much more money if they were actually good.

December has been very strong I guess pretty much since 2001 when LOTR:FOTR & Harry Potter released.
Big titles can virtually have theatres all to themselves through March... whereas summer, every single week an entire slate of bigger new titles comes out.
I think once Infinity War 2 is done, Star Wars should move back to summer.
Avatar 2 I'd bet money it'll be a December release.

I think it's a little bit of them wanting not to have Marvel and Star Wars movies playing at the same time, but more for the merchandising.
There's also the traditional family element of Christmas, and many fans of the originals now have kids or grandkids who'll want to get in on it. Seems they're selling Star Wars as entertainment for the whole family.
I think they ought to jump on the May 4th bandwagon personally.

For now, no. Releasing Star Wars in December has worked perfectly for the last two films. The Force Awakens grossed $2 billion worldwide while Rogue One grossed over $1 billion, which is roughly the same box office gross as the last few Marvel Cinematic Universe films. I'll wait and see how well Solo does in May 2018, which may decide if Star Wars should just stick to December release dates.
Nevertheless, as everyone else has said, Marvel has held a stronghold on the summer movie season for some years now in the absence of Star Wars that it's only fair to give those films and future Star Wars movies their own time to breathe.

I don't think much difference would be made.

I figured maybe Kids being off for 3 months instead of 2 weeks would make a bigger $ impact?

In fact, these are not films. They're very long ads for toys.

That doesn't matter anymore.
Avatar and Titanic were both released in December.
