This is a serious topic. For once.
The MCU has been building up to Infinity War and Avengers 4 for 11 years when the latter movie comes out. The overall story arc will come to an end.
The stories that are surfacing for post Avengers 4 are those that seem to hint at a new MCU but still connected. But now X-men & Fantastic 4 are coming home.
That makes me wonder: Shouldnt they reboot and now with all their characters at their disposal. Recast the characters and reboot so all characters can interact with each other from the beginning.

No reason to. The Infinity Gauntlet opens all kinds of opportunities to bring in characters from alternate realities, timelines, etc. Anything is possible now, we don't have to reboot to incorporate all the new characters into this world.

My point is: the six original Avengers are retiring from the franchise for the most part. So we will not see Captain Rodgers interact with Logan. Or Tony with Reed Richards.
Rebooting it all with a new cast and all the characters could be a great thing.

But at the same time, I'd rather if they didn't. Let the new characters take the reins.

No. They don't need to reboot! They already established how powerful the Infinity Stones are and they could easily chang reality. That's their entry way of bringing in Mutants.
Besides it would be nice to have other unused characters be pushed in spotlight.

No. There's a wealth of possibilities still left after all.

There is no need to reboot. They can just introduce the first generation of Mutants sometime in Phase 4 or 5.

That's basically a reboot. They're using it as a plot device to add in new elements that really only work if they've been present for a while (Mutants emerging now can work, but Xavier and Magneto's character depend on longer presence). But not to undo all the prior movies.

No, just integrate X-Men and F4 with the current crop. Then once this set runs its course, please, no more reboots for at least a decade.

Reboot sounds like "do the same thing again with a new cast" to me. That would epic fail. That would imply that everything we have seen really didn't happen.
Just recast and continue on. Focus on other characters for a while then bring in the new Tony, Steve, Thor, Banner, Natasha, etc.
Not saying that is easy of course. Casting Cap might be the hardest thing to do in comic book movies. Marvel has owned casting so far, but a key mistep with those characters could be a huge blow. They did blow it once with Banner so they aren't perfect.

No. Here's the possible phase four lineup...
Spiderman Homecoming 2 Dr Strange 2 Ant Man 3 Black Panther 2 GotG 3 Fant4stic Homecoming Captain Marvel 2 Thor 4
That's a pretty jam packed lineup. Original Avengers not needed.

If they're smart, they'll kill off the older characters and give them heroic, memorable deaths. This will push them from "current fashion" into "legendary nostalgia" among viewers. Then start introducing new characters (like the X-men) to take over their spots.
