What did he say about Star Wars? First off that he's "too dangerous" for them to hire on as a director and also this: “I think they [Disney] like to be in control, and I like to be in control myself,” he says of the higher-ups in charge of “Star Wars.” “When you get a guy who’s done a low-budget movie and you suddenly give him $180 million, it makes no sense whatsoever. It’s fuckin’ stupid. You know what the reshoots cost?” www.indiewire.com/2017/12/ridley-scott-star-wars-disney-1201912138/

Disney likes to be in control. Don't think we have ever had a movie company so anal about controlling content and message. But show me where Disney's owners actually have cash problems from any of their reshooting. Money, they do not lack.

He wasn't bashing Star Wars. He was criticizing the hiring process in which Disney (and for that matter, major film studios) select inexperienced low-budget film directors for studio tentpole films so they can exercise control.
As for The Merlin Saga, that's up his alley. He directed Legend.

I assume he's referring to the new Star Wars directors being "Directors-for-hire", with Disney being the actual ones with the creative control. Which is very true. Like when Edgar Wright was set to direct Ant-Man but was replaced due to Disney wanting his name only, not his creativity.

They replaced him because he sat on his thumbs for years wasting time, to the point they couldn't include the Ant-man characters they'd wanted to use in earlier movies because he didn't want them used. Also he had bizarre ideas that weren't Ant-Man at all, like him being an Ant made into a Man.

After Alien: Covenant he should better shut up. Yeah it was bad, but it didn't shit on the entire franchise that came before it unlike The Force Awakens did. It only shat on Prometheus.

Since this Star Wars movie was/is promoted as a strong female lead bullshit, I won't watch it, hence I can't say. But I managed to watch 50 minutes of Alien Covenant (while being a huge Promotheus fan - for me the best movie of the franchise; nothing intrests me less than the monster) till the slapstick comedy part kick in and everybody was in a Mr. Bean mode and slipping around and shooting in the ceiling...ah yes, and the 500 gram alien that could wreak havoc of a security glas windows as it was made of some plastic foil. I watched Dark yesterday, and thus I'm not in the mood for such brainless crap.

Alien Covenant was just pure stupidity.
