It's a Mad, Mad, Mad, Mad World type movie, with a zany chase for some object, with about 20 big name actors/actresses in it.
A good adaptation of 'Salem's Lot, going the Evil Dead (2013) route with gore and wet look cinematography.
The Bank Shot - bank robbers rob the bank - by stealing the actual bank.
On Golden Pond. Either exact remake or similar story and set-up.

The Black Cauldron. I read a few of the books and apparently Disney still has the rights.

Either exact remake or similar story and set-up. I remember three "good" zany chase movies from the 70s & 80s.. Million Dollar Mystery (1987), Midnight Madness (1980) and Scavenger Hunt (1979). Midnight Madness's charm I don't think could be reproduced but the other two could probably be redone and made "better".

I'd like to see an HBO miniseries adaptation of Tom Wolfe's Bonfire of the Vanities, recounting the dreadful excesses of the 1980s and New York City back then. The movie version left much to be desired.

The movie version left much to be desired. Great idea. That one's due for a remake that does the book justice. I think the main reason the film went wrong was making Bruce Willis's character too central, and American.

I would like to see a Stargate (1994) remake...
Originally it was supposed to have been a trilogy of films... before the TV Shows SG-1, Atlantis, & Universe were created... The sequel films were scrapped in favor of the TV Shows.
For several years now, there have been talks about remaking the film... and maybe even going back to the original concepts which were planned for the second and third films.
I would be fine with that...
or even if they remade the film as a mix, the best of, the original film concepts & TV Shows...

Mailer's The Naked and the Dead is the greatest of war novels. The 1958 film is only so-so.

It's probably better labeled a reboot than a remake, but I'd love it if a whole new crew got their hands on the G.I Joe franchise. I loved the cartoon and I think there is a wealth of exploration possible with the foundation it provided, but the live action films were way off the mark. I'd love to see what Nolan would do with the franchise if he could start with a clean slate.

I'll pitch this idea again: Remakes of successful movies from the perspective of a different character.

Salems Lot: YES PLEASE! I wonder why it hasn't happened already!
Bank shot: Sure.
On Golden Pond? No. That was a movie made specifically for Hepburn, and the Fondas. The casting was crucial to that experience. Re-casting would ruin it.

I've mentioned it before in other threads, my #1 choice would be 20, 000 Leagues Under the Sea . The Kirk Douglas version which came out in 1954 is still good but its dated as hell.
David Fincher was supposed to remake/reboot it for Disney but because of some of their big budget bombs (John Carter, Tomorrowland & Lone Ranger), they pulled the plug on it. Such a shame too cause I wanted to see Fincher direct a huge budget film (esp with how good cgi is nowadays) . Fincher also mentioned in several interviews that he wanted to make it darker / grittier & closer to the book . Oh well.
