If Gal Gadot was part of the MCU from the beginning, which role would have best fit her and how well would she have been received in that role?

If we're talking any MCU character that is already come into existence, then I'd say she would be Gamora in GOTG, given how her role of WW is portrayed as a strong warrior, the same as Zoe Saldana's Gamora.
She would receive decent praise in that role.

Maybe not, but only because I'm so used to Saldana's role, plus the fact that from what I seen, Zoe is more of the action-type female character. Also, Gamora was only a secondary character in the Guardians movies so everything else kinda overshadowed her in terms of how well Saldana did. For what she did though, she did pretty good.

Valkyrie is a good idea, though the role itself was pretty underwhelming. It would've fixed one problem I had with Thompson...she's awfully short for what you'd expect from an Elite Asgardian. Gadot is the right height.

Gadot is the right height. True that. Considering Thor's comment in Avengers about humans being puny and tiny, the MCU should have placed a size/height standard when hiring actors for Asgardians.

Throwing a wild card out there...
Mockingbird. (Assuming they never brought her into Agents of SHIELD and just brought her into the MCU)
If they kept a similar dynamic between her and Jeremy Renner that she had with Chris Pine it could be great.
Of course, they kinda negated their relationship in Ultron, though she could be an ex. Actually, the whole, ex (Mockingbird) vs. Wife (umm...Linda Cardellini) vs. work wife (Natasha) would be a fun dynamic to see Renner play off of. Deepens the character more and adds unforced comedy.
