nutsberryfarm 🏜: looks interesting. I never knew that pancetta was so salty. Me, I'd probably opt for crispy slices of fried bacon in place of the pancetta. The Pesto sauce in place of mayonnaise looks interesting, too.

It looked a little burnt to me!
I would have turned down the heat so that it took slightly longer to cook and melt the cheese and not get overly brown! I might try one in my sandwhich press though I think the spinach leaves might wilt/cook too much....hmmm

It looks nice except I would cook the bacon a little longer. Just to the point that it is perfectly crisp all over.
