Just a few choice selections is difficult when there is so much cinematic gold.
Chapter I - The conversation between Vito and Michael in the Garden. "Whoever comes to you with this Barzini meeting is the traitor". Sonny's reaction to seeing Connie with a black eye. "Can't do it, Sally." Sonny slipping up when meeting with Sollozzo. "All right, now I have to make arrangements to bring him back here safely cleared of all these false charges. But I'm a superstitious man, and if some unlucky accident should befall him... if he should be shot in the head by a police officer, or if he should hang himself in his jail cell, or if he's struck by a bolt of lightning, then I'm going to blame some of the people in this room, and that I do not forgive." Brando is phenomenal in that moment.
Chapter II - "We was like the Roman Empire. The Corleone family was like the Roman Empire." This movie is almost unbearably sad at times. Michael returning home from Cuba. The music is indispensable. That final shot. "You're nothing to me now." Love the cinematography in this scene with the outside weather contrasting with the always dark interiors of the Corleone house. The shot that follows Vito, while still a grocer, across the street. The attention to detail makes for a beautiful scene. Vito killing Don Fanucci then returning to his family. Chapter III - The opening shots of the abandoned compound in Nevada. Michael dying alone. Such a tragic character arc.

Iβm in the process of rewatching. Iβll make my list after and try to include some different ones. The first ones that come to mind are always the popular ones.

For a change of pace, I'll talk about some scenes from Part III.
-Michael's confession to the priest as well as later crying over the coffin "Give me a chance to redeem myself and I will sin no more".
-The opera stuff at the end is well-edited.

- Michael tells Sen. Geary "we're part of the same hypocrisy" - Hyman Roth says "We're bigger than US Steel" - In the Young Vito sequence, Vito declines Genco's offer of free groceries after letting Vito go, but Vito says he won't forget his generosity - Michael telling Kay she won't take away his children and reveals she had an abortion - Fredo's "It wasn't what I wanted!"
Part III:

Yes, there are many good choices.
PART I - Tom displaying cool and class after being insulted by Woltz. "I admire your pictures very much." - Vito slapping Johnny "YOU CAN ACT LIKE A MAN!" and then mimicking him to the amusement of the others. - Enzo offering his help, then standing outside the hospital with Michael as they pretend to be the security for Vito. You can tell Enzo is not a criminal because he's shaking so hard afterwards that he can't even light a cigarette. - The settling of debts sequence which begins with the Renewal of Baptismal Promises "Michael Francis Rizzi, do you renounce Satan?" PART II - Young Vito singing while quarantined on Ellis Island.
- The small stage show where the man gets a letter telling him his mother has died. "Mama! Mama mia!!" While singing he keeps resisting the urge to pick up the pistol and put it to his head. - Vito politely trying to persuade the widow's landlord not to kick her out. After asking about Vito around the neighborhood, the landlord has a serious attitude adjustment. - Vito's revenge on Don Ciccio. - Senator Geary displaying his hypocrisy "I despise your masquerade, the dishonest way you pose yourself. You and your whole fucking family." - "You broke my heart, Fredo. You broke my heart." - Fredo expressing his resentment at always being given menial tasks. - The profound effect on Pentangeli after seeing his brother at the Senate Committee hearing.
PART III - "Bastardo." Vincent bites Joey Zasa's ear. Michael's look of disappointment at the demonstration that Vincent is a hothead just like Sonny was. - The helicopter attack on the mob bosses. - Anthony's operatic debut in Palermo - Don Altobello's suspicion of Connie's gift of (poisoned) cannoli until she pretends to take a bite.

So much good stuff that it would be difficult to choose, (not to mention whenever I revisit the series I always notice something new) but whenever I'm asked to choose a scene from the series, I'm always struck by one in particular - the one where Michael is stuck outside the hospital with Enzo the baker knowing hitmen are coming for his father. It's a very interesting scene where Michael discovers something critical about himself, which on reflection, proves to be one of the most, if not the most pivotal scenes in the entire series where he learns he is psychologically equipped to become the person he eventually becomes.

The Godfather... Sonny beating up Carlo. Even tho the punches missed by a mile itβs the spirit of the scene that counts. Clemenza and Paulie. Leave the gun, grab the cannoli. Carlo getting in the car at the end with Clemenzas silhouette behind him. Hi Carlo. When Tessio realizes heβs been busted. I watched a video on the breakdown of that scene a while back. How the feeing of claustrophobia is represented by several individuals all coming into the shot together from all angles surrounding Tessio. It really does work so well.

At the end of Part II, when Michael shuts the door on Kay and that sound she utters, which sounds so utterly sad and powerless.
