As far as I know, the Rian Johnson trilogy is still happening, and there’s also supposedly going to be a series of films from the guys who have written for Game of Thrones. So are there really two separate trilogies of films in development before the current trilogy is even finished?

Yep, neither with any organic demand or inherently interesting stories or any reason to be made except to make money. Hooray! Disney's finally cast off the flimsy pretense of tryna make "Star Wars" movies and is now just officially making Disney crap with the SW name slapped on it as an afterthought/branding consideration.

They haven't even defined how many movies the Thrones guys will make or why, which I suppose is 1% less stupid than arbitrarily giving them a trilogy "because Star Wars movies come in trilogies" as in the case with that pencil-necked geek, Rian Johnson.
