I gotta go with the obvious choice of Casablanca, which I actually just saw tonight for the first time. Excellent movie.
Honorable mention: Maltese Falcon
What say you?

Treasure of the Sierra Madre
Well, first off, I'm goin' to a Turkish bath and I'm gonna sweat and soak till I get all the grime and dirt out of my system. Then I'm goin' to a haberdasher's and I'm gonna get myself a brand new set of duds...a dozen of everything. Then, I'm goin' to a swell cafe - order everything on the bill of fare, and if it ain't just right, or maybe even if it is, I'm gonna bawl the waiter out and make him take the whole thing back...

Treasure of the Sierra Madre or The Caine Mutiny. Another one that doesn’t get mentioned a lot is The Desperate Hours.

Treasure of the Sierra Madre.
However, I thought his best line was in The Maltese Falcon:
"When you're being slapped, you'll take it and like it."

As Casper Gutman might have said -- 'If you miss a Bogart film, you can always see another. But there is only one MALTESE FALCON.'

Dark Passage is a lot of noir-ish fun.

I am going to chicken out of choosing. So many great films and roles.
Not the greatest of his movies, though very good indeed and which maybe showcased his acting abilities to the best, is In a Lonely Place (1950). Mind you, playing opposite Gloria Grahame was hardly a handicap.
Other fine performances in "late Bogies" were in African Queen (1951) and Sabrina (1954). The man lost nothing as the years rolled by. Maybe the opposite.

So many great performances in so many great films -- The Maltese Falcon, The African Queen, Casablanca, The Big Sleep, to name just a few -- but if I had to pick just one it would be The Caine Mutiny. I never tire of watching this film. Queeg is such a fascinating character and very much against type for Bogart. He normally played tough, self-assured men, but Queeg is a complex bundle of uncertainties and obsessions, and Bogart's exploration of the character is superb.

"The Maltese Falcon" has been a personal favorite since childhood, long before I became a Bogart completest. One night in, oh, about 1969, I left my friends at a loud party at a neighborhood bar to go home to see "The Maltese Falcon" which was scheduled to play on the 10:30 late movie. This was long before home video. You had to be there to catch a film whenever it was broadcast and "Falcon" meant more to me than having a good time out.

You're quite welcome, Spider.
Rick Blaine, Sam Spade, Charlie Allnut, Linus Larrabee, and Lieutenant Commander Philip Francis Queeg -- all characters brought to life on the screen by Bogart. He had tremendous range as an actor.

Impossible to choose which child is my favorite.
All of the above plus many not mentioned. Even in the early films and/or the rare clunker the man has never disappointed.

I think it's easier to list the Bogart films I don't like. Really only one:
Dark Passage.
I absolutely love Big Sleep and Maltese Falcon.
A lesser known but still favorite of mine is Sirocco.

CASABLANCA THE AFRICAN QUEEN THA MALTESE FALCON THE CAINE MUTINY
And although it not really a "Bogart film" (he played a supporting role, only appearing halfway in the movie), I also love THREE ON A MATCH. In fact, it was with Bogie's first appearance that the crux of the film changed, from an interesting character study of three schoolgirl friends and the women they grew up to be, to a rather standard WB crime melo.
