I disagree with Interstellar.
I think the movie did a very good job of stretching out Cooper's journey and rushing Murph's that helped explain the time differences.

I tend to think movies are as they are released. So if a movie need more time, then the movie is flawed for poor editing and it's hard for me to give brownie points for effort after the fact.
So I guess the only moves I would want to see extended are ones I already love as is and want more of such as the LOTR movies.

I would have cut most of the early scenes on Earth out of Interstellar.
I know they had to include some in for the payoff at the end.
But it was a tough slog.

Making movies longer never improves them. If a scene wasn't good enough to make it in the first time around, then it's not worth putting in later.

I don't really agree with OotP. It's the longest book, but also the most plotless and pointless. Harry finds out fighting Voldy is his destiny - we kinda figured. The school has a horrible new teacher/headmaster - gone by the end and back to Dumbledore. A major character dies - that we were just introduced to a book and a half ago. I wanted to pull my hair out reading it and was glad the movie streamlined it.
On the other hand, I think cutting so much from the book hurt GoF, though I hated Newell's direction so I'm not sure I'd want to sit through 3+ hours of his take. HBP is the one fans really complain about. I think it's an excellent movie, and my favorite of the 8, but I'd take a few extra Voldemort memories and a Dumbledore funeral to shut up purists. The Ginny romance, the only major flaw of the film imo, could have benefited from a few extra scenes as well. Though, like the book, the main problem there is that there is practically zero setup in the previous 5 installments.
Movies I always wish were longer are ones that don't really develop the characters. Rogue One and Scream 4 come to mind.
