...six movies instead of a trilogy?
While I'm happy with the movies we have now, I do feel they were much better received and arguably much better films if Lucas spread out the story in six movies instead of three. Episode II should have took place only 5 years after the events of The Phantom Menace and Jake Lloyd return as Anakin Skywalker. This film should have also introduced Count Dooku into the story and we could have gotten to see the strong friendship Obi-Wan and Anakin developed together after the death of Qui-Gon and show Obi-Wan being very impressed with his amazing skills at a really young age.
Attack of the Clones should have came out in 2005 and been Episode III. Episode IV should have came out in 2008 and it would take place between Attack of the Clones and Revenge of the Sith and should have basically been what the 2008 Clone Wars series was. Then Revenge of the Sith should have been split into two movies and have the first half come out in 2011 and the second half come out in 2014.

well, I subscribe to the old line of thought that the OT had not enough narrative content because it was essentially one script pumped up with added content (thus the inconsistencies and repetitions), whereas the PT arguably had too much.
Artistically speaking, Lucas built and crafted the PT nicely in line with the classic art-trinities and dramatic 3-act-structure in mind, of daylight (heyday), twilight (crisis) and night (downfall).
But ultimately I think the form best suited for such a huge story (telling a decade long conflict ending in war and tyranny) would probably a modern show, not movies. The prequels reimagined R-rated a la Battestar on HBO would be artistically interesting and maybe redefine SciFi.
...But short answer: yes and no, from a certain point of view...

Lets look at the prequels movies... which one of them had anything happen in them that actually impacted on the future movies? Only ONE! ROTS. That's it.
Phantom Menace could be completely erased and you wouldn't miss it. AOTC only had the marriage of Anakin and Padme as a crucial moment, and it was just once quick scene at the end. You could have done that somewhere in ROTS and boiled the whole thing down to ONE movie. Even the whole Clone Wars themselves were given fairly short shrift.
IMO all we needed from a prequel story was happened in ROTS. One movie.
The true answer is that the SW prequels would have been better if they had been directed by a truly inspired director who was more interested in story and filmmaking than technology and FX. Lucas was rusty and it showed.

What Tristan said, a TV show would have been perfect for the narrative George Lucas wanted to tell.
I may be alone with this opinion but I believe Star Wars was made too early. I have felt that way about OG Star Trek as well.

Trilogies are there since the Dionysia festivals of ancient Greece as the dominating storytelling tool for a good reason. They force you to come to a point and not to drag the narrative out endlessly. Both trilogies are creative masterpieces of their time with their unique feel and tone. Both have flaws.

How about just pacing the three movies better? You talk about spending more time developing the friendship of Ani and Obi-Wan in the wake of Qui-Gon's death - how about just not having Qui-Gon in the first place? Have Obi-Wan discover Anakin...you know, like ROTJ said he did. You talk about introducing Dooku earlier. Great idea! Do it in Movie 1 of 3.
I've seen effective jobs of showing a good man turn bad in one movie, let alone three. Let alone SIX. Lucas wasted two movies on nonsense, then shoved all the meat and potatoes into ROTS.
