Xmas Eve: corned beef hash (a recipe from an old Betty Crocker cookbook, very simple, potatoes, onions, butter, and canned corned beef) Xmas day: pizza and Caesar salad

Although I'm not Jewish, my Christmas dinner tradition is the same as theirs - take-out Chinese food! {probably became that way because most restaurants are closed}
I'll try to get a few healthy items (heavy on veggies) and cook a few things myself (like brown Basmati rice - and I have homemade shrimp egg rolls in the freezer). Still, it's once a year, so I'll indulge a bit - their Szechwan Chicken is mighty fine.

Unless you're going for something really unique, it's pretty easy to make yourself, and there are several good recipes on the 'Net. divtal might even have a few. I do, but they're dated, and I can do better.

Our family Christmas dinner is/was rib roast, mashed potatoes and a veggie. As I'm "hermitizing" this year, I ordered a rib-eye steak, which I'll pick up tomorrow. I'll still do the potatoes ... and probably green beans ... and have nice leftovers. I'm not a big dessert eater, but I always have ice cream on hand, and a nice neighbor always bakes wonderful ginger cookies for a group of us, so I'm set.

Well,it seems we're going all out.Even though there's just the two of us the cooking addict mrs has set the menu: 10 lb smoked ham,5 lbs fresh collards (with turkey necks),5 lbs mac and cheese,5 lbs candied sweet potatoes,5 boxes stove top stuffing (w jarred gravy).I took it upon myself to tell two sets of neighbors who aren't cooking to expect large plates of food.
It's been so long since I made a ham that I just spent over an hour watching Youtube vids and reading google articles re 'desalting' the ham and I've found conflicting evidence to A: soak ham overnight in water,B,boil ham in water,or C ,just let it go since several bits of info say modern cured hams don't need to be desalted.So I'm at a loss here as what to do. Any advice re ham is welcome. Happy Holidays to all,Nico.

Your neighborhood will certainly eat well, Nic. You guys are most generous.
I've never cooked vegetables with turkey necks. But, when I've roasted a Thanksgiving turkey, I leave the neck in the bottom of the pan to render its flavor for gravy. No one else has ever had any interest in it, but I think it's deliciously crisp and gelatinous. I get it all to myself.
Can't help you on desalting a ham. I don't understand the practice of brining a turkey/chicken to make it moister. It would seem to me that the salt in the brine would draw moisture OUT of the bird. Chemistry isn't my long suit.

Christmas Day and New Year's Day were two of my favorite days for it - not much of a wait in the lift lines. {My downhill days are behind me, but I just got a new pair of X-C ski boots delivered an hour ago - about to try them on. They look pretty - and *warm*. Hope they fit.} ========== I'm about to start working on my Chinese menu options (it's a BIG menu). Since it's a weekday, I can get the lunch specials - and there's a $2 off if you order $20 perma-coupon. One thing is certain - I'm going to get WAY too much! "Nothing exceeds like excess."

Perfect freaking fit! I'm ready for "snow hiking" now. 'Tis the season. {My "new" skis are only 25 years old. My bamboo poles are twice that. Never seen no reason to upgrade 'em though.} ==================== I went out hiking today - a part of my physical therapy effort to rebuild my strength and stamina. 'Twas a lovely day for the PacNW - mostly sunny/calm/mid-40's - and I saw a couple of amusing signs worthy of note. A sign at the start of the trailhead read (among other things): "Stay safe. Stay home." Say what? Not far past that was a sign where some railroad tracks cross the road. The sign for the CCCP Railway read: "Trains approach without warning" Well "Spasiba!" for the heads-up tovarisch!

Wish we had snow here. 77 yesterday, so when it got below 40 today, I got a walk in. Got very close to downhill skiing once in Tahoe, but my ex asked if we could skip it.
