So... Hulk was told by Tilda Swinton that the stones had to be put back as if they were never taken- preventing time branches/alternate realities...
But how did Cap manage to put the space stone back in the cube? Or the power stone back on that one planet? Or the reality stone back into Jane? Did he go to Asgard and inject her in the butt with it?! ...Without her knowing?!
Also, didn't Thor taking Mjolnir create a new reality?
And HOW did Cap return as an old man?! Didn't staying with Peggy create a new timeline? How did he return to the same future?!
Dont get me wrong. It was a great movie. But none of it makes sense. Unless I'm missing something?

Cap brought Mjolnir with him when he went back in time, so assumingly he returned it the same he returned the stones. It was sitting next to him in the time machine.
But they never resolved Loki stealing the tesseract, so that definitely created a new timeline.

Captain America didn't 'return' as an old man he went back to the past and stayed there and arrived at that specific moment in the future when they were sending him back in time. It did not create an alternate timeline as the younger version of him was found in ice in 2011-2012 and took part in everything that transpired from there to then, so there were *two* Steve Rogers co-existing all this time the older one chose to stay low and avoid getting involved with his younger self or his associates and was with Peggy till her passing.

My guess:
Power stone he brings back to that planet while Quill is knocked out
Soul stone he brings back to Vormir just as Red Skull is packing his bags
Reality stone maybe he gives it to Odin with Mjolnir. I can see him figuring out what’s going on like bald Tilda Swinton did
Maybe he can use the time stone on the space stone and mind stone to put them back in the cube/sceptre
Give back the time stone last
How he ended up on the bench I’m not sure. Perhaps he could’ve gone back to that reality when Peggy died?

Right, but wouldn't Steve staying in the past have caused a divergent timeline? If anyone recognized him it would have certainly impacted reality. Unless he became a complete hermit and never left Peggy's basement.

You're probably going to get, if you haven't already, a ton of fanatics saying that none of those are confusing, nor are any of them plot holes, etc. etc.
But they are. Absolutely they messed a few things up for the sake of moving past certain things to keep the story moving.
SPOILERS For example: Where is the Mjonlnir that Captain America took with him when they sent him back in time? He came back as an old man with the shield, but where's the hammer?
And all the things you mentioned are all valid questions too. Cap came back as an old man because he stayed in the past. That I'm okay with, but there are other issues.
Don't get me wrong, I loved the movie just the way it is. But there are some issues that need to be worked out. Maybe they did it that way on purpose so that they could deal with them in future movies? I hope.
Here's my biggest question... All these people took possession of an infinity stone at any given time throughout the movie... isn't just ONE infinity stone so powerful that it could kill a normal person just by them holding it? Isn't that what almost happened at the end of GOTG Vol 1? Quill only survives because he's half Ego, and the Guardians shared the power by holding hands. And yet, in this movie everyones like "yeah, let me hold them stones for a minute. It'll be fine."
