Jambalaya, was great, though not authentic.
2 cups brown basmati rice 1 cup Pearl barley 4 1/2 cups low salt chicken broth Instant pot (24 min multigrain setting, 50 minute timer for release)
Sauté in order, in a large saute pan: Olive oil plus 1 tbsp flour 1 Onion Mushrooms 3 stalks Celery 1/2 Bell pepper 2 jalapeños
Move all to one side of the pan. On the other side Garlic cloves, halved 2 Sliced hot pork sausages (brown both sides)
Mix and add, in order: Can of diced tomatoes 12 Shrimp large {21-25 size, have them contact the pan) Parsley, thyme, red pepper flakes Worcestershire sauce Done when the shrimp is done (turn till opaque) Mix most of rice into the pan

Singapore street food, which means it can be almost anything the cook wants, within certain basic ingredient requirements. Most recipes start with long, skinny noodles. In the US that usually means long wheat noodles, steamed lightly, then added to the other ingredients in the wok at the last moment.
The sauce is composed of coconut milk and a yellow curry blend characteristic of Singaporean cooking. Green onions, sliced jalapenos, mung bean sprouts, and a topping of chopped peanuts just before serving make it closer to authentic Singapore street food.
The dish usually has slivered red-cooked pork in it. The most authentic versions have shrimp added with the sprouts and pork. I have been served this dish with thinly sliced chicken and shrimp, with chicken and pork, and with my favorite shrimp and red-cooked pork. All were in the US, but in ethnic kitchens featuring different approaches to approximating the original.
I can't consume gluten, so my ability to reproduce at home this long-time restaurant favorite has only come with the discovery of a better gluten-free pasta, made with rice flour and lentil flour. I use the spaghetti shape. Lacking that, I use GF ramen noodles.

Garlic rotisserie chicken Brussel sprouts and carrots
The chicken was bought ready made at Walmart. The frozen vegetables steamed in the microwave then sauteed in a skillet with unsalted butter, olive oil and Aldi dry steak seasoning.
The vegetables were just as delicious as the chicken! A nice char on one side of the sprouts.
The chicken lasted four days with 2 people eating on it. My mom made chicken and rice one night for her and I chopped up some and added it to a Mrs. Grass' noodle soup.
Walmart rotisserie chickens usually don't last me more than a day with me but I have been indulging my fatassery with UDF milkshakes this week.

I had a 1 pound brisket, so I made it in the instant pot. Not quite my favorite method, but it's gone now. Had half for an early lunch and the rest with steamed broccoli for dinner.
Seared it, made a rub, cooked with onion and garlic and broth. 40 minutes meat setting, 15 minute natural release.
Some was a bit tough, some was like mush. Pot roasty
