An interesting category, in fact; I frequently appreciate the cleverness of stories-within-stories, including movies-within-movies.
Can we compile something of a list?
The Bad and the Beautiful is a definite favorite of mine; I frequently saw the "spiritual sequel," Two Weeks in Another Town, which I didn't like quite as much.

Hail, Caesar! has several films in it.
The Exorcist has a scene in which a film is being shot. (A friend is in it!)
Boogie Nights depicts some porn films being made.

and going with the idea of a story within the story The Princess Bride has scenes of a book being read outloud and interaction between Grandpa and the boy that interrupt the movie itself.

My favourite, a brilliant and very clever film within a film would have to be the French movie ... Trans-Europ-Express (1966) Alain Robbe-Grillet The location/setting is the Trans-Europ Express itself (Paris to Antwerp), Embarking on the journey are a group of filmmakers. a writer-director (played by Robbe-Grillet himself), his producer and the production secretary armed with typewriter. The team discuss a thriller they want to make and see the great possibilities on-board this train setting. As they chat we cut to another traveller on the express. We now shift to inside the movie they’re talking about and we see a drug-smuggler on his way to Antwerp to collect a shipment of cocaine... The filmmakers now set in motion a series of re-workings of what we have just seen onscreen. From now on the two parallel worlds of the film itself, its characters and authors, and a different or parallel narrative space interweave and collide as the filmmakers constantly change their minds as continuity and other issues arise rewriting on the run...

Some real movies within movies:
Bonnie and Clyde (1967) - The angst-ridden trio of Clyde, Bonnie and C.W. go to see Gold Diggers Of 1933 to take their minds off the bank teller Clyde's just killed.
Caprice (1967) - Industrial spy Doris Day goes to a theater and sees Caprice, starring Doris Day (which gives an idea of the meager level of the film's cleverness).
The Last Picture Show (1971) - And that show is Red River.
Earthquake (1974) - When the big one hits, Victoria Principal is in a theater watching High Plains Drifter.

The Last Action Hero Young Danny Madigan is a big fan of Jack Slater, a larger-than-life action hero played by Arnold Schwarzenegger. When his best friend, Nick the projectionist, gives him a magic ticket to the new Jack Slater film, Danny is transported into Slater's world, where the good guys always win. One of Slater's enemies, Benedict the hitman, gets hold of the ticket and ends up in Danny's world, where he realises that if he can kill Schwarzenegger, Slater will be no more. Slater and Danny must travel back and stop him.
Much better than it's given credit for being. Many in-jokes that "the kids" just don't quite catch! It's really a fun movie and it does have a movie within the movie ! Nalkarj

Public Enemies (2009)The agents only know that there are two possible theaters Dillinger could be going to: the Biograph Theater, which is showing the Clark Gable gangster film Manhattan Melodrama, or the Marbro, which is showing the Shirley Temple movie Little Miss Marple.(sic) Ultimately, it is the former theater.
Dunno if they actually show them watching the film. I love the Christie oops in the IMDb user write-up !
