We were going to go out to eat but decided to stay in our warm home and have this today. What are you having? For this we have everything but ricotta cheese. But we have the next best thing. Cottage cheese. And to go with it this: And several of these to wash it down:

I'm looking forward to a pan-seared salmon steak. Over the last 10 days, or so, I've had so much of the traditional meats/fowls. It's been good, but awfully rich. I usually work fish into my dinners a couple of times a week, and I've missed it. I have some asparagus left over from what I cooked on the day after Christmas - I splurged - and, I'll steam a few spears of that. It'll be a dinner that reminds me of spring ... which isn't too far off!

Ah, there is nothing like cast iron for cooking ... anything. Yes, I do mine is just such a pan.

Sandman: Cooked this little pork roast overnight in my slow cooker. Seasoned with salt, pepper, seasoning rub and garlic cloves. Aroma is fantastic. Will be noshing on this tonight:

Peas and carrots - peas frozen, home grown carrots from the crisper. Home grown corn off the cob - buttered and salted. Home grown Yukon Gold 'taters cooked whole in their jackets.
A can of meatballs bought in the local "scratch and dent" store - Best By Nov. 11, 2017. Good (if they don't kill me). Added some celery, onions and chili spices and garlic powder.

Buffalo cheeseburger with onion on white toast. First time I have had unadulterated buffalo meat. Tastes no different than regular hamburger.

I had some really good home-made chili-mac. It really hit the spot in the cold, damp weather. I'm glad I've got several more servings left in the pot.
